Christmas Vicky Sponge!!

Here is a recipe for a Victoria Sponge.  If like some people you do not like a Christmas cake then this is a good alternative.






Ingredients
6 oz sugar
6 oz dairy free marge
3 eggs
6 oz self-raising flour
1 teaspoon vanilla essence

Royal icing to decorate.

Method
Mix all the ingredients in a bowl with an electric mixer.  Next place in a tin and bake for approx 30 mins at 180 degrees.  Keep checking it.  A good tip for seeing if it is cooked is to stick a barbeque skewer in it and see if it comes out clean; if it does it is ready.  Leave to cool.

Once it has cooled slice it in half horizontally and spread some jam in the middle.  Then cover with a thin layer of jam, before placing some ready-rolled royal icing on top.  You can make your own festive decorations to go on top.  I chose to make some snowmen as they are easy as you just make some balls and then stick them together.   My brother helped me decorate the cake with holly!

I entered this cake for the school christmas cake competition - someone outbid my Mum and bought it for over £5!!
