Cake pops!!

Today i made some cake pops for new years eve! They are pretty easy, you just need the right equipment.









Ingredients 
6oz plain flour6oz sugar3 eggs
6oz butter
1 tsp vanilla essence 
 2 bars chocolate
sprinkles

Equipment 
a cake pop tin(buy at all good retailers or baking shops)
a hand whisker
tablespoon
cake pop sticks


method
  1. first put the  butter, flour, sugar and eggs into the bowl and mix with the whisk.
  2. Add the vanilla essence and then take a tablespoon at atime and place the mixture in one half of the tin and then place in the oven at 180’c for 25 minutes.
  3. Once they have cooled melt 1 bar of chocolate and then dunk the sticks one by one in to the chocolate, then insert in the cake pops.
  4. Then you have to leave them in the fridge for 15 mins.
  5. Next melt the other bar of chocolate and smother the cake pops in chocolate.after you have done that add the sprinkles and put in the fridge.
  6. Once they are solid you can enjoy!!

 christmas chicken and vegetable pie!


Today I made a chicken and vegetable pie as I thought I would make something savoury for once!  It is quite a challenge but it is definitely worth the wait!





Ingredients:
for the rich shortcrust:                                           
275g plain flour                                                                                                                   
pinch of salt
1 medium egg
1tsp lemon juice
2-4 tbsp cold water
135g butter(dairy free)
for the filling:
1 onion
40g butter (dairy free)
40g plain flour
400ml milk(dairy free)
1 chicken stock cube
nutmeg(a pinch)
mustard powder(a pinch)
250g cooked chicken(cooked separately)
200g mix of sweetcorn,peas and carrots
1 egg or milk to glaze

method:


1. Put the flour and salt into the bowl and mix them together.Lightly beat the egg with the lemon juice and 2 tbsp in a measuring jug with a fork,  set aside.
  1. Add the butter to the flour rub the butter into the using your fingerprints.keep going until the mixture looks like breadcrumbs.
  2. make a well in the center of the mixture and pour the egg mixture into that well.Combine the mixtures by using your hands.If it should feel dry add some water!
  3. When the dough is quite sticky form into a ball, kneed it lightly don’t overwork the mixture. a tip to check if it is a good dough take a piece of the dough and start to roll it out and if it cracks then kneed it again.
  4. Wrap the dough in some  cling film and place for about 30 minutes!
  5. While that is in the fridge you can start on the filling; heat oven to 200c/fan 180c/gas 6.
  6. Peel an onion as finely as possibly.Melt the butter and cook the onion for about 5 minutes,stir occasionally.
  7. When the onion is cooked add the flour to make a paste called roux.Crumble the stock cube in as well. Continuously stir to prevent the starchy taste.
  8. Slowly add the milk and keep stirring,then add the salt , nutmeg and mustard powder and bring to the boil and keep stirring all the time to stop the sauce becoming lumpy.
  9. When the paste has thickened place on a very heat add the cooked chicken and add the vegetables to mixture and cook for a couple of minutes then pour into pie dish.
  10. Put the pastry on a surface and roll out to the size of the top of the pie dish and then place on top of the pie dish,brush some milk or egg on the top of the pie!
  11. Cook the pie for about 25 minutes or until golden brown.

Christmas Vicky Sponge!!

Here is a recipe for a Victoria Sponge.  If like some people you do not like a Christmas cake then this is a good alternative.






Ingredients
6 oz sugar
6 oz dairy free marge
3 eggs
6 oz self-raising flour
1 teaspoon vanilla essence

Royal icing to decorate.

Method
Mix all the ingredients in a bowl with an electric mixer.  Next place in a tin and bake for approx 30 mins at 180 degrees.  Keep checking it.  A good tip for seeing if it is cooked is to stick a barbeque skewer in it and see if it comes out clean; if it does it is ready.  Leave to cool.

Once it has cooled slice it in half horizontally and spread some jam in the middle.  Then cover with a thin layer of jam, before placing some ready-rolled royal icing on top.  You can make your own festive decorations to go on top.  I chose to make some snowmen as they are easy as you just make some balls and then stick them together.   My brother helped me decorate the cake with holly!

I entered this cake for the school christmas cake competition - someone outbid my Mum and bought it for over £5!!

Xmas Choccy Log

Hi, today I made a Christmas chocolate log!It's quite hard but if you want a delicious dairy free bake, then this is the recipe for you!

Ingredients

  • 4 large eggs
  • 100 g caster sugar
  • 65 g self-raising flour
  • 40 g cocoa powder

For the chocolate icing and topping:
    Butter(dairy free!)
  • 4 tbsp apricot jam(or any other flavour you wish)
  • icing sugar, for dusting


The mixture should look like this.


Method


1. Preheat the oven to 200°C/gas 6. Grease and line a tin with baking parchment. 

2. For the sponge, place the eggs and sugar together in a large bowl. Using an electric hand whisk, beat the mixture until it is pale, light and frothy. 

3. Sieve the flour and cocoa powder into the bowl and carefully fold in to the egg mixture take  care not to beat any of the air out of the mixture. 

4. Pour in to the lined tin and spread out into the corners. Bake in the middle of the oven for about 8-10 minutes until pale golden and the sides are shrinking away from the edge of the tin. 

5. Place a piece of baking parchment bigger than the Swiss roll on the work surface. Invert the cake on to the paper and remove, peel away the baking parchment. 

6. Trim the edges of the cake with a sharp knife. Roll up (from the longer edge) using the paper, rolling it up with the paper inside. Set aside to cool. 

7. While the cake is cooling, make the icing. Whisk in butter (as much as you need) and icing sugar. Add cocoa powder until brown.

8. Uncurl the cold Swiss roll and remove the paper. Spread  the jam on the log and re-roll tightly. cake off from one end, . Transfer the large piece of cake to a serving plate and cover with chocolate icing.

9. Dust with icing sugar and run a fork through the icing to make it look more like a log!!

Marvellous Marble Cake

Hi, here is how to make a dairy free marble cake. It is quite challenging but it's worth the try.

















Ingredients:
250 grams butter (dairy free if you're allergic)
1 teaspoon vanilla extract
275 grams caster sugar
3 eggs
335 grams self- raising flour
180ml milk(dairy free)
pink food colouring(or any other colours)
2 tablespoons cocoa powder

Icing(additional):
90 grams butter(dairy free)
160 grams icing sugar
if you want you can put food colouring in it



 METHOD

1. First preheat the oven to 180c/160c fan-assisted. Grease deep tin line base with baking parchment.

2. Beat the butter,vanilla extract and sugar in a bowl with a electric whisk until light and fluffy.Add eggs one at a time beat until combined.With a wooden spoon, stir in flour and milk.

3. Divide  the mixture in to three equal parts in different bowls.Then add food colouring and cocoa powder.

4. Using a teaspoon drop alternative spoonfuls of the three coloured mixtures in the tin. Then with a cocktail stick move it backwards and forwards until a marble effect appears.

5. Bake for 1 hour,uncovered.

6. Once the cake has cooled spread the icing over the cake. ENJOY!!!!!!!!

Hi, my name is Amaya and I love baking even though I am allergic to dairy. I am 10 years old and have been baking since I was about 7. Baking is great fun and everyone can do it.
